At the entrance to Saint-Tropez, Les Viviers du Pilon embodies the soul
of a family-run institution where a passion for seafood has been passed down with discretion and exacting standards for over sixty years.
The story begins in the 1960s, with three visionary friends from Marseilles, including Pierre GUASTI’s grandfather.
Driven by a love of the sea, they took the daring gamble of setting up fish ponds at the entrance to the village, in the Pilon district, still in the making. Their idea: to offer live lobsters, preserved in renewed seawater, guaranteeing absolute freshness.
Success was immediate, and the confidential address became a must, prized by customers in search of
authenticity and excellence.
The years go by, the hands change, but the spirit remains.
In the 1980s, Pierre & Florian GUASTI’s father took over the business with a fierce determination to preserve the soul of the place. He has modernized the facilities without ever altering their identity, and the heart of the company remains intact: quality, freshness, and know-how deeply rooted in tradition.
His son, Pierre, grew up with the sea, learning the skills of the trade from an early age, and developing an instinctive passion for the sea and its gastronomy. It was only natural that he and his brother should take up the family torch, sharing the responsibilities with precision.
Every day, Pierre selects the finest cuts of wild fish, ensuring a daily supply to the fishmonger’s for individuals and professionals in the Gulf of Saint-Tropez. Florian, orchestrates the restaurant, where lobsters, wild fish and crayfish come alive right up to the plate.
Today, the fourth generation has joined the adventure:
